课程概述

We are what we eat--morally as well as molecularly. So how should concerns about animals, workers, the environment, and community inform our food choices? Can we develop viable foodways for growing populations while respecting race, ethnic, and religious differences? What does food justice look like in a global industrial food system where there are massive differences in resources, education, and food security? The main goal of this course is not to prescribe answers to these questions but to give students the tools required to reflect on them effectively. These tools include a knowledge of four leading ethical theories and a grasp of key empirical issues regarding food production, distribution, and consumption....

It changed my way of thinking of food. I was picky before but now I'm way more picky.

Really, really complete course! What can I say, if you are interested in knowing more about where food comes from, how is it produced, who makes it, the cultural value we assign to it, the diseases, and prevention, the malnourishment, hunger, and obesity stats around the world, the ways different religions see animals, the colonisation and big Ag that impose ultraprocessed food versus the regenerative polyculture food justice models, and as a whole, upcoming artificial alternatives and sustainable local systems, with its flaws... then this is the course for you. A mixture of expert interviews, student questions, stats, selected reads, activities, discussions, and lectures will problematise your views of food. How animals are misstreated, and how workers are exploited. What are the hidden costs of contamination, and the invisible biases and simplifications we rely on that are exploited by ads and plate/product sizes to make us consume... go for it, check the course, it's free! What can I say, if you want to be a more informed eater instead of making the decision to remain on the unknown, in blissful ignorance... if you want to challenge the conventions around vegetarianism and veganism and see the limits of supply chains and recycling. Heck, if you've heard about utilitarianism or virtue ethics or maxims and minimums. Taking this course will, I believe, help you give these topics a new layer of depth. One of effective altruism, and evidence-based consuming.
